Selecting 1++ Female Hanwoo Flower Ribeye and Salchisal from the Showcase

The hallmark of a authentic Korean butcher-restaurant is complete transparency. Every pack in the refrigerated showcase displays the livestock tracking code, processing date, meat grade (1++, 1+, 1), weight, price per 100g, and total price.

The highlight of our visit was the breathtaking 1++ Grade Female Hanwoo Flower Ribeye (๊ฝƒ๋“ฑ์‹ฌ). Featuring fine snowflake-like intramuscular marbling, it was priced at just 10,500 KRW per 100g (approximately $7.80 USD). Rare specialty cuts such as Salchisal (chuck flap tail) and strip loin were also available at very fair rates.

Wholesome Side Dishes and Complimentary Piping Hot Seonji Soup

After checking out at the meat counter, tables are quickly arranged with banchan (side dishes) for a modest table setting fee of 4,000 KRW per adult. Offerings include crunchy seasoned bean sprouts, house kimchi, fresh perilla leaves, lettuce, and sliced garlic with ssamjang.

The crowning glory of the complimentary spread is the piping hot Seonji Hangover Soup (์„ ์ง“๊ตญ) served in a boiling earthenware bowl. Freshly sourced from domestic cattle, the curd is completely odorless, silky, and tender, swimming in a deeply savory broth stewed with soybean sprouts and white radish.

Savoring Tender Beef Grilled Over Glowing Oak Charcoal

A bucket of glowing oak charcoal is nestled into the table pit beneath a wire grid. Placing the thick ribeye onto the hot grate produces an immediate sear, locking flavorful meat juices deep inside while imparting a delicate woody smokiness.

Turned just once and cooked to medium-rare, a tender morsel lightly dipped in coarse sea salt literally melts upon the tongue. The concentrated umami of female Hanwoo beef and the melt-in-your-mouth richness of the marbling make this meal unforgettable.

Delicate Seasoned Raw Beef Yukhoe and Comforting Stews

In addition to barbecue cuts, ordering a plate of Hanwoo Yukhoe (ํ•œ์šฐ ์œกํšŒ) from the dining menu is highly recommended. Tender raw beef round is lightly tossed with fragrant toasted sesame oil, minced garlic, and crisp sweet Korean pear slices, allowing the beef's natural sweetness to shine.
